Brew Guide
These brew guides are built by our Roastery team to help you brew great coffee, every time. Each method outlines a clear process designed to bring out the best in your coffee.
- Preheat your brewing vessel
- Weigh your ingredients
- Make sure your brewing vessel is clean
- Use water that is almost but not quite boiling
- Make sure to wet all the grounds evenly
- Rinse any paper filters with hot water before use
- Be sure to grind the coffee to the correct coarseness for the brewer you are using
- Fresh coffee will "bloom" which is CO2 being released as hot water hits the coffee
- To adjust strength change the grind, not the ratio of coffee to water. For stronger tasting coffee grind finer for less intense flavor coarsen your grind.
- Wet filter with boiling water and discard water
- Put in 20 grams of medium ground coffee
- Pour in 100 grams of water & allow coffee to bloom
- Pour in remaining 240 grams of water little by little & use the stream of the water to push any grounds off the sides of the filter
- When all water is in stir once in a circular motion
- Let drip till done
- Put in 55 grams of coarse ground coffee
- Pour in 935 grams of water just off the boil
- Stir
- Fit top on to retain heat and wait 4 minutes
- Plunge
- Decant to another vessel
- Wet filter with boiling water
- Put in 40 grams of medium ground coffee
- Pour in 200 grams of water & allow coffee to bloom
- Pour in remaining 480 grams of water little by little & use the stream of the water to push any grounds off the sides of the filter
- Let drip till done
- Place the top portion of the brewer upside down on table
- Fit the bottom section over the rubber basket (At this point the numbers should be upside down on both parts of the brewer.)
- Put in 15 grams of medium ground coffee
- Pour in hot water to top (around 250 grams)
- Stir and make sure there are no dry grounds hiding at the bottom
- Let sit for 45 seconds
- Affix the filter cap with a wetted paper filter into the fitting (this should be at the top at this point) and depress a tiny bit so the slurry is close to the filter.
- Carefully invert the entire brewer onto your heated mug and press to the bottom.
- Add preheated water to the fill line.
- Grind your coffee to a medium setting, similar to table salt. Add 15-17 grams to the filter basket.
- Screw on the top portion of the brewer. Careful as it will be hot.
- Place brewer on your burner over medium heat.
- Open the lid to view the brewing and remove from the burner when the stream starts to go from brown to blonde.
- Enjoy straight up or add some hot water for a mellower cup.
- Grind coffee very fine. It should be similar to confectioners sugar.
- Weigh your dose. 19 grams is a good starting point.
- Distribute the ground coffee as evenly as possible. There are tools for this or you can do it by hand.
- Tamp the coffee, making sure the bed of grounds is as level as possible.
- Purge your group head by running a small amount of water into the drip tray.
- Insert the portafilter and engage the brew right away.
- The shot should take several seconds to start flowing and the total time should be around 30 seconds.
- If you are making a milk drink you can steam the milk while your shot is pouring.
A few espresso fundamentals:
- Always brew with a clean, hot, dry portafilter.
- Use your hand to swipe away any loose grounds on the rim or tabs of the portafilter before inserting to brew.
- If the shot is running too slow you need to coarsen the grind. If the shot is running too fast fine the grind.
- Make grind adjustments in small increments.
- Always pull a couple of shots after an adjustment before deciding whether or not to readjust.
- Always purge off a bit of steam before and after you steam milk to clean the wand out. Never soak the steam wand or leave it submerged in milk.

If you’re unsure, whole bean gives you the most flexibility.
A good starting point is a 1:17 ratio (1 gram of coffee to 17 grams of water). Adjust to taste.

I think these beans would've tasted better had I bought them directly from Fernwood or one of their coffee shops but I can't recommend them regardless due to the subpar taste. They taste chalky and lack even the chocolatey and nutty notes you'd expect from a medium roast.

These are the ONLY decaf coffee beans I have found that are a true medium roast- not dark roast like the others. They have a lovely mellow flavour. Decaf and I have a love hate relationship, love that I'm drinking coffee, hate that it has to be decaf. Mile Zero has good flavour and depth, but sometimes it can be a challenge dialing in the grind to be smooth without the bitterness or acidity that can be more pronounced with decaf coffees. Mile Zero allows me a little more latitude and forgives grinding miscalculations. It has good depth of flavour, without being too syrupy or on the other end bitter, as a drip it is great, and never disappoints. I highly recommend Mile Zero for a decaf for use in espresso drinks or as a drip coffee.

This coffee is very dry roasted. It is light brown and chalky, and not like any other coffee beans and coffee that I have purchased. It leaves a sludge in my cup and blocks the flow through my reusable keurig basket. I wanted to like this coffee because it is local but I will stick to my usual brand. I did try to post this review already days ago and for some reason it is not posted.
The beans and the grounds are light brown and dry. They are not a nice dark and semi-moist bean or ground like all other coffee beans I have tried. The grounds blocked up my reusable keurig filter and just made sludge sit in the basket. The coffee wasn’t bitter, which is nice, but it was very chalky. It’s not a nice process from start to finish. I read the reviews and thought that I would enjoy this. I really wanted to love this coffee and support local but I will continue to buy my regular brand.
Still the smoothest decaf coffee that I have found. I keep returning to this coffee like many others.
