BREWING FUNDAMENTALS

  • Preheat your brewing vessel
  • Weigh your ingredients
  • Make sure your brewing vessel is clean
  • Use water that is almost but not quite boiling
  • Make sure to wet all the grounds evenly
  • Rinse any paper filters with hot water before use
  • Be sure to grind the coffee to the correct coarseness for the brewer you are using
  • Fresh coffee will "bloom" which is CO2 being released as hot water hits the coffee
  • To adjust strength change the grind, not the ratio of coffee to water. For stronger tasting coffee grind finer for less intense flavor coarsen your grind.

CONICAL POUR OVER

(Hario V-60 or similar)
POUR OVER BREWING INSTRUCTIONS
  1. Wet filter with boiling water
  2. Put in 20 grams of medium ground coffee
  3. Pour in 100 grams of water & allow coffee to bloom
  4. Pour in remaining 240 grams of water little by little & use the stream of the water to push any grounds off the sides of the filter
  5. When all water is in stir once in a circular motion
  6. Let drip till done

FRENCH PRESS BREWING INSTRUCTIONS
  1. Put in 55 grams of coarse ground coffee
  2. Pour in 935 grams of water just off the boil
  3. Stir
  4. Fit top on to retain heat and wait 4 minutes
  5. Plunge
  6. Decant to another vessel

CHEMEX BREWING INSTRUCTIONS
  1. Wet filter with boiling water
  2. Put in 40 grams of medium ground coffee
  3. Pour in 200 grams of water & allow coffee to bloom
  4. Pour in remaining 480 grams of water little by little & use the stream of the water to push any grounds off the sides of the filter
  5. When all water is in stir once in a circular motion
  6. Let drip till done

AEROPRESS

AEROPRESS BREWING INSTRUCTIONS
  1. Place the top portion of the brewer upside down on table
  2. Fit the bottom section over the rubber basket (At this point the numbers should be upside down on both parts of the brewer.)
  3. Put in 15 grams of medium ground coffee
  4. Pour in hot water to top (around 250 grams)
  5. Stir and make sure there are no dry grounds hiding at the bottom
  6. Let sit for 45 seconds
  7. Affix the filter cap with a wetted paper filter into the fitting (this should be at the top at this point) and depress a tiny bit so the slurry is close to the filter.
  8. Carefully invert the entire brewer onto your heated mug and press to the bottom.

I think I got old beans....

I bought these at "Pomme" in Port Coquitlam - no roast date to be found anywhere on the bag - after a couple espresso pulls I just am not a fan. They seem stale to me - almost no aroma, very brittle, just not a lot here - grocery store coffee. I should have known better to get a bag with no roast date and just got the Agro or Rosso bags that were dated. This may be a much better bean direct/fresh but I can only review what I bought/got.

Thank you for your honest review. I’m very sorry you got a stake bag. If you send a photo of the lot number embossed in the seal I can tell you the roast date. We try our best to manage inventory that goes out to grocery stores and discourage them from holding back stock or extra inventory. Pomme markets is not one of our busier stockists, unfortunately. That being said we can’t control how the coffee moves in remote locations and you likely did get a bag with some age on it. We’ve taken your feedback to heart and will be looking at adding roast dates to our new bag designs. All of our single origin coffees that are more exclusive to our site and high end food service do come with roast dates. When we developed that (grocery) bag years ago we tested roast dates and ran into a problem with consumers thinking it was a best before date and that the product was passed due. I feel that the consumer knowledge has evolved and that people will better understand it now.

Our favourite espresso coffee!

We have tried a variety of espresso beans over the years. Finally found what we were searching for! We find the 1976 Espresso to be well balanced, smooth with no bitter aftertaste. We love 1976 cappuccinos every morning. We order the beans online and always arrive within a few days.

Favorite Espresso

My go-to espresso. Deliciously well-balanced, warm and smooth. I order a 5lb bag every few weeks, and look forward to my coffee(s) each and every day. Can't say enough positive things about 1976 and Fernwood!
