				<content:encoded><![CDATA[<p>Earlier this month Graham represented us at the Western Canadian Barista Championships and came in a very (11 points,) close second place to former Canadian champ Kyle Straw. Graham wrote a very thoughtful and insightful presentation on customer service and it&#8217;s relevance in regards to guests who were new to specialty coffee. Keeping with that theme his sig drink was simple and accessible while still being elegant and interesting. He prepared a raspberry and cardamum infused espresso.</p>
<p>We are extremely proud of Mr. Bouvier&#8217;s accomplishment and are excited to have him represent us at Canadians.</p>
<p>Coffee newcomer Liam Quinn also deserves a nod for the time, energy, and culinary knowledge he tirelessly devoted to Graham&#8217;s training and comp.</p>

				<content:encoded><![CDATA[<p>Our very own Morgan Allen, (aka @baristaMo13,) has brought home the title of Western Canadian Regional Barista Champion. Morgan&#8217;s win is the second consecutive regional victory for Fernwood and is the first step in the road to the Canadian Championship.</p>
<p>Morgan beat out the rest of the field by a huge margin, (80 points over second place,) with an innovative performance that focused on pure barista skills. He opted to leave out any extra ingredients in his signature beverage and instead focus on how variations in grind can manipulate the flavour and body of espresso. The judges had a hard time wrapping their head around this one but also recognized the skill level required to pull it off.</p>
<p>We&#8217;re very proud of Morgan&#8217;s win and the effort he put forth to get there. On October 2nd he will attempt to follow up his win at the Canadian Barista Championships. If he is successful there it will mean back to back National titles for Fernwood Coffee Company.</p>

				<content:encoded><![CDATA[<p>I think it&#8217;s time for an update. Where to start?</p>
<p>I&#8217;ll summarize the last few months events and fill in some details in the near future.</p>
<p>I guess the 2 big things to mention are our appearance at the world Barista Championship and the complete renovation of our cafe.</p>
<p>Our very own Rob Kettner represented Canada in Bogota, Colombia a few months ago and placed 16th out of 54 countries. We&#8217;re very proud of all his hard work and pretty hopeful that we will get to represent Canada again in the coming years.</p>
<p>As for the reno, it was pretty much a complete reboot of our cafe space. The layout is very similar but with all new decor and equipment. We are going to coincide our grand re-opening party with the Western Regional Barista Championships this August.</p>

We&#8217;ve recently recieved shipments of Hario hand grinders, pourovers, kettles, decanters, and serving pitchers, Bee House ceramic pourovers, and Chemex pourover pitchers and filters. Along with those products came some great reading material from 2004 World Barista Champion Tim Wendelboe and a couple of excellent titles from renowned coffee pro Scott Rao. We will also be recieveing the exciting new Kone metal filter from Coava Coffee in Portland very soon. This filter works perfectly with both the Chemex and Hario V60 pourover. So now we know what you&#8217;re thinking, all these products sound great, but how the heck do they work? Well, for the afternoon tasting tomorrow 2010 Canadian Barista Champion Rob Kettner will be doing a demo of these products. He&#8217;ll be using Hario&#8217;s Buono kettle and Skirton hand grinder to dial in some delicious brews using the various pourover designs we&#8217;ve got for sale.  It starts at 4p.m. and will take place in Fernwood Coffee Company&#8217;s Parsonage Cafe.</p>

				<content:encoded><![CDATA[<p>Well, better to post late than never&#8230; It feels like ages ago already but it was actually just last month that Rob and I travelled to Brazil to take part in the 2010 Fair Trade Cupping competition. We were invited to be part of the international Jury which judged the final rounds of cupping for both the washed and natural coffees submitted by over 150 fair trade producers. There was a limit to 30 sac micro lots and a Brazilian jury narrowed the initial field from over 150 farms down to the 20 best washed and the 20 best natural process coffees. Our job was to determine the top 10 in each category and rank them. With us there were 3 Brazilian judges, 1 other Canadian, 1 american, 1 Korean and 1 Japanese judge. At the end of 2 days of intense cupping the winners were announced at a gala with all the farmers in attendance and the winning coffees were auctioned off. We ended up purchasing the 2nd place washed coffee and are waiting for its arrival.</p>
<p>Without getting into any kind of debate about Fair Trade vs. other systems I can say this trip was a great chance to see first hand where our premiums go that we pay when we purchase fair trade coffees. It was also nice to see Fair Trade focus on improving quality at origin, which is often one of the things they are criticized for.</p>
<p>The things I saw and learned that really made the trip worthwhile are almost too many to list but here are a few of the big ones;</p>
<p>I had the misconception that there was a typical &#8220;Brazilian profile,&#8221; for flavors and characteristics but I couldn&#8217;t have been further from the truth. We tasted such a variety of styles of coffee on the cupping table that I left feeling a lot of excitement for future offerings from Brazil.</p>
<p>Another thing I took away from this was a better understanding of regional tastes and preferences. Natural coffees that the younger North American Judges loved for there berry notes and fruit sweetness were viewed as fermented and some were even disqualified by the South American Judges. The line between sweet/fruity and ferment is at different levels for different people. The most important thing is that you know your own customers enjoy.</p>
<p>Of course visiting farms and meeting small scale producers in their homes was amazing and really makes one appreciate what goes into the drink we love so much. We met hard working, honest, happy people who live in some of the most beautiful places on the planet and although they weren&#8217;t wealthy by our standards they never hesitated to share what they did have with us, break bread with us and roast and brew coffee for us.</p>
<p>We have said we would like to work towards sourcing our coffee directly from small scale producers at origin and as a young company this has been one of our main challenges. This trip was the first step in the right direction for us to start realizing that goal.</p>

After months of training, tasting, rehearsing, arguing and being over caffeinated Rob and the rest of our team put it all together on the two days that counted. It was an emotional roller coaster that started with a westjet employee informing us that the  &#8221;big wooden crate,&#8221; (which contained our glasswear,) had been damaged before we even boarded the plane. It ended with Rob hoisting the huge Reg Barber made trophy over his head. In between there were ups and downs. Rob going over time by 51 seconds on day 1 was a low, Ben getting into the finals of the Canadian Cuptasters Championship was a high. The announcement that the time penalty had not kept  us out of the finals was a huge high. Day two was more of the same, Rob finished his routine with time to spare and rejoiced, only to get some tragic personal news which made the whole thing seem bitter sweet. But in the end the scores were announced we came out on top. What a ride.</p>
<p>A huge thank you goes out to all the people who helped along the way, (you all know who you are and have likely already been thanked in person or on twitter.) And another huge thank you to the judges, volunteers and competitors who made it such a fun and exciting weekend.</p>

				<content:encoded><![CDATA[<p>First off, our tasting next Thursday (Aug 19) will be cancelled due to some staff vacations. If you haven&#8217;t been to one of our Thursday afternoon tastings yet you have to come down and give it a go. We have drawn some interesting groups of people with a good range of coffee knowledge from newb to pro so far. We will be back on on the 26th. It is a safe bet that most of the tastings between now and the end of September will have something to do with the National Barista Championships as we prepare.</p>
<p>The other things I wanted to mention are our new single origins. We have 2 sacks from a 20 sack lot of Perla Negra natural process Costa Rican. The ripe cherries are tested with a Brix (sp?) refractometer and the sweetest ones are held for this micro lot. The other coffee of note that we just got in is a beautiful bright washed Sidamo from Moredocofe. Great as s.o. espresso. We are just tweaking the roast profiles so the next roast should be available on line.</p>
